Daniel started his career in hospitality at Rogano in Glasgow where he worked as both a chef and waiter, before moving to London in 1990 for a two-year spell at L’Escargot. Following a break to go travelling, he returned to Rogano and then to 78 St Vincent. He relocated to London to join Le Caprice as a Chef de Rang before moving to Daphne’s.
He joined The Wolseley for its opening in 2003 and worked his way up to Restaurant Operations Manager in 2011. Daniel was appointed General Manager at Colbert in October 2012 and returned to The Wolseley as General Manager in May 2015. In April 2019 Dan moved to to open Soutine in St John’s Wood as General Manager. Daniel then opened Manzi’s to life in summer 2023, before moving to open The Wolseley City in November 2023.
Head Chef Jai grew up in Mumbai surrounded by a plethora of culinary influences, from Indian and Vietnamese to Italian and Thai. He found an early passion for his mother’s improvised dishes, which, he says, were ‘fresh and seasonal, with an emphasis on fish, vegetables and low, slow cooking’.
He began his professional training more than twenty years ago, after abandoning a career in medicine, called instead by the desire to experiment with flavour and to understand the science of food. Six years spent as Sous Chef on board the QE2 resulted in a number of highlights, including the opportunity to use a wealth of global ingredients, as well as cooking for Queen Elizabeth II. Jai settled in the UK in 2009, and spent four years as Head Chef at The Ivy Collection before joining The Wolseley Hospitality Group in 2024. ‘There is no greater love than the love of food,’ he says. ‘It has the ability to satisfy, nurture and create happiness in a way that nothing else can.’
Originally from Romania, Ioana originally studied medicine at university. However, circumstances took her to Spain where she worked in a family run restaurant and a passion for hospitality was ignited. Four years later she moved to London with her partner, eventually finding her way to the Beaumont Hotel in 2017 as Maître d’hôtel. In 2019 she moved across to The Wolseley in the same role, and was promoted to reception manager in 2022. In October 2023, Ioana played a pivotal role in the launch of our latest restaurant, The Wolseley City, where she now holds the position of Maitre D hotel.
