Daniel started his career in hospitality at Rogano in Glasgow where he worked as both a chef and waiter, before moving to London in 1990 for a two-year spell at L’Escargot. Following a break to go travelling, he returned to Rogano and then to 78 St Vincent. He relocated to London to join Le Caprice as a Chef de Rang before moving to Daphne’s.
He joined The Wolseley for its opening in 2003 and worked his way up to Restaurant Operations Manager in 2011. Daniel was appointed General Manager at Colbert in October 2012 and returned to The Wolseley as General Manager in May 2015. In April 2019 Dan moved to to open Soutine in St John’s Wood as General Manager. Daniel then opened Manzi’s to life in summer 2023, before moving to open The Wolseley City in November 2023.
Growing up near the South coast, Ed originally moved to London in 2008 to study music at university – while studying he began working in pubs behind the bar, which sparked his passion for the hospitality industry. Ed first joined The Wolseley back in 2014 as a Commis Chef, before being promoted to Sous Chef – and after a stint with Michelin starred Restaurant Story in 2018, he returned to the fold as Sous Chef, and was promoted to Senior Sous Chef in June 2019.
Originally from Romania, Ioana originally studied medicine at university. However, circumstances took her to Spain where she worked in a family run restaurant and a passion for hospitality was ignited. Four years later she moved to London with her partner, eventually finding her way to the Beaumont Hotel in 2017 as Maître d’hôtel. In 2019 she moved across to The Wolseley in the same role, and was promoted to reception manager in 2022. In October 2023, Ioana played a pivotal role in the launch of our latest restaurant, The Wolseley City, where she now holds the position of Maitre D hotel.
Originally from Spain, Jesus embarked on his hospitality career by immersing himself in his parents’ restaurant business at a young age. Armed with a prestigious 3-year hospitality qualification, he set his sights on the vibrant restaurant scene in the UK.
His journey began at an exclusive Spanish restaurant in Aldgate, and soon, Jesus secured a sought-after Front of House position at the renowned National Theatre. Over an impressive 15-year tenure, he ascended to the role of Restaurant Manager for two bustling theatre establishments.
Following the challenges of lockdown, Jesus embraced a new chapter as the Floor Manager at Colbert before seizing the opportunity to become the Bar Manager at The Wolseley City. Leading a team of 10 bartenders and 8 baristas, Jesus channels his passion into inspiring and motivating his team to deliver heartfelt hospitality to our guests.
